Veggie Sandwich

2 Slices of your favorite whole wheat bread - toasted
1 tablespoon of Hummus
1 roasted bell pepper (about 2 - 3 slices)
4 slices of cucumber - cut lengthwise
1 tablespoon of avocado - or three thin slices

Place all on the toasted bread and heat until warm in the oven.  If you need more protein/calories, add sliced hard boiled egg.  Grab some almonds for a side rather than chips.  The great thing about this sandwich, its filling plus you get a good serving of veggies and healthy fats.
