Chicken Noodle Soup

What are the health benefits of chicken noodle soup? Research conducted by scientists at the University of Nebraska Medical Center in Omaha have studied the medicinal activity in chicken soup in vitro. They found that some components of the chicken soup inhibit neutrophil migration, which may have an anti-inflammatory effect that could hypothetically lead to temporary ease from symptoms of illness. However, since these results have been obtained from purified cells and directly applied diluted soup the in vivo effect is debatable. Regardless of what the research shows I know that when I'm not feeling well this soup always hits the spot.

INGREDIENTS
1 gallon water
1 (4 pound) whole chicken, cut into pieces
1 large onion, peeled and halved
3 bay leaves
10 whole black peppercorns

2 tablespoons chicken flavored bouillon
2/3 bunch celery, leaves reserved
1 pound whole carrots
1 (8 ounce) package dry egg noodles

Put 1 gallon of water in a stock pot and get it boiling. Once the water has started boiling add the chicken, some salt, then cover with a lid. After 1.5 hours take the chicken out of the stock and set aside. Let the stock cool for about 30 minutes and then skim the fat off the top of the broth. Place the stock back on the stove, add all your chopped veggies including the bay leaves, salt, pepper, chicken flavored bouillon, cover and cook for 1 more hour. Cook your noodles separately and then add to the stock pot along with some chicken.
